Thursday dawned as Warren's 60th Birthday. The sun was shining and we were up bright and early, despite thinking, on Wed. night that we would have a sleep-in.
I made Waz's favorite Blueberry pancakes for breakfast, and as we were rather stuck on the boat.
The wind had died overnight and the sky had high light cloud. As you can see, the water is very still.
Warren had expressed the desire to have a box mix Key Lime Pie for his birthday. When I looked at the ingredients, we decided not to make a pie, as the crust alone required 5 tablespoons of butter!!! We didn't really need that on our waistlines, so I decided to use the crust creatively elsewhere. When I made up the key lime pie filling mix, it was rather gluggy and heavy. I whipped the 'topping' up as per instructions, and then folded that into the pie filling mix to lighten the whole thing. Wanting to keep the whole thing from being totally gross, I whipped heavy whipping cream and layered the crumb, pie filling and cream into these plastic cups. It filled them all, and has been more than enough for a dessert. We have spread each one over two meals for the most part. They aren't too sweet, thankfully, and we have generally enjoyed them, finishing the last one on Sunday night.
After lunch of soup and ciabatta rolls, we put our jackets on and went for a walk over the Panama City Bridge.
Standing half way up the UP side of the bridge, we looked back and were rather surprised to see that Untide stands head and shoulders above her marina mates.
At the top of the span we watched this 'looper' boat go under the bridge. We had passed this one before and had a chuckle about here name. The boat is called Noelle...and the name on the dinghy pulled up at the back, is 1st Noelle!:)She didn't stop in Panama City, but kept going along the ICW into the distance.
From the top of the span we look down the other side. That is a condo on the right, and you can see the highway curving around in the distance.
From the far side, we look back towards Panama City. While we were under the bridge, walking around, we watched these net fishermen putting their catch in a bucket with a lid on, because the Pelicans try to steal the mullet, caught.
While down watching the fishermen, we saw pods of dolphin very close to the wharf area.
This was one of the last photos I took before the camera battery died...just when I needed it most! dang!
As we got to the top of the span on the way back across the bridge, we watched a large pod of Dolphin rounding up their dinner. There were many babies included in the group circling not far from the bridge.
We watched them for a long time as we made our way back down the bridge back to the boat. It got quite cold the later it got. We were glad to get back to the boat and have a cuppa.
There isn't anywhere we can really walk, around here, as this is on a main road, but no matter, we have a car on Friday and we can go places then and on the weekend.
We had some chicken that needed eating, in the fridge, so Warren got his favorite food for dinner...curry! I had made some scalloped potatoes the night before, and we had enough left over to enjoy with the curry, instead of rice. It made a nice change. Instead of using my fresh veges up, I opened a bag of frozen, mixed vege and put those in the curry along with Onion and ginger. It was yummy! and very inexpensive. We will do that again!
WE spent the evening reading and turned in reasonably early.
