I have been meaning to post this for a few days now, but other more important things have taken over.
Occasionally we like to have a little dessert. Remember I made the cheesecake without sugar? Well, we kind of liked it, so I have been experimenting with other desserts.
The first one (after the cheesecake) was a lime (my favorite) flum duffery...or something like that.
1 x 8oz package of Cream cheese...softened
1 cup of Sour cream (full fat 4%)
1/2 cup heavy whipping cream
1x sugar-free jello (jelly for kiwis) package (small) of your flavor of choice.
Cream the warm cream cheese and sour cream together.
Boil enough water to allow for 4 table spoons of boiling water mixed with the jello crystals to dissolve them. Stir them well. Cool slightly.
Add the jello a teaspoon at a time, and blend well with a hand held or bowl mixer on whip.
Finally, add the cream in a constant stream. Whip it all well, and pour into a bowl or container to refrigerate for several hours before serving. It is a light dessert with no sugar and min. carbs.
The flum duffery is a nice texture and best served with fresh fruit...strawberries/blueberries and a little whipped or drizzled liquid cream.
